NOSE & PALATE
On the nose, there is a flattering peaty note, accompanied by light straw and herbal notes, and balanced wood. On the palate, there is also the peatiness, which lingers without becoming overbearing. The herbs from the nose reappear on the palate, together with distinct notes of dried apricot. In the finish, there is a certain saltiness, no doubt due to the fact that we matured on casks that previously held whisky from Islay.
MATURATION
This whisky has been matured on ex-Islay casks and chestnut casks.
PAIRS WITH
Flavorsome cheeses, i.e., blue cheese, dark chocolate, oysters, or smoked fish, for instance, salmon.
