A crucial factor in deciding the flavours extracted in the distillation is the design of the stills. Tall, narrow stills produce a cleaner and fruitier profile, compared to the short and compact stills that produce a heavier and harsher tone.

To increase the range of our production and to enable us to give individual products the exact flavour profile we are aiming for, we have built our distillery with two pairs of stills. This means two wash stills and two spirit stills, but with completely different shapes and so completely different characteristics. Our tall, narrow stills produce a light, malty, and fruity distillate, whereas our short, broad stills give us heavier, harsher, and peatier flavours. These distillates can then be matured as they are, or blended to create a specific flavour profile.
